My favourite low-budget travel-friendly Salad

 

I'm starting to add a collection of travel-friendly, low-budget dishes (this being my first post.) 

Do you think packing a salad for a flight is a definite NO?

It honestly depends greatly on the ingredients put inside it. 

I'm a huge advocate of eating nutritiously, and after breaking my leg this summer. I started to experiment with just how little I could spend while sticking to an enjoyable and healthy diet.

This Chickpea mango salad cost me $12.00 Canadian dollars and, makes a serving size fitted for 4 people. That's a pretty wicked deal! 

Most importantly it's LEGIT so delicious (duh!)

Ingredient list

  • 1 bag of coleslaw (454 g)

  • 1 bunch of kale

  • 1 head of Broccoli

  • 1/2 can of chickpeas

  • 1 mango

  • LiteHouse Sesame Ginger dressing

  • Onion salt

This recipe is VERY simple, depending on if you want to roast the chickpeas and Broccoli, this recipe can take only 10 to 15 minutes.

Vegan Chickpea Mango Salad

Directions

  1. Grab a large mixing bowl and toss your bag of coleslaw in. Boil water and place the broccoli (florets only) in water for 7 minutes.

  2. Drain the can of chickpeas, wash, and dry them. Place 1/2 cup of chickpeas and broccoli florets (after boiled) on a baking sheet. Stick in the oven on boil (grill) for 8 minutes (until looking a bit toasted)

  3. Peel and cut up 1/2 mango into square bits

  4. After the chickpeas and broccoli come out of the oven, place 2 handfuls of washed kale in the oven on boil (grill) for 3 minutes (until steamed) then rip the kale leaves into chunky pieces.

  5. Place all the ingredients into the mixing bowl and, drizzle Sesame Ginger dressing on top as you wish! (I prefer to sprinkle onion salt throughout my mixing process as well for extra flavour) However, you can skip this step if you choose.

Last minute tips 

  • How to pack this dish for travel. Make sure you keep the dressing, salt, and mango on the side. Also, wait for everything to cool down before packing it all together, it will preserve freshness.

  • If you aren't feeling the vegan thing, you can obviously add whatever protein you want to this dish. Any lean meat/fish would be a tasty addition.
